Mango Pina Colada Smoothie

Sometimes on a Monday you just need to pretend like you're on a tropical vacation rather than on your way to work.  This mango pina colada smoothie will help you feel like you're somewhere warm and tropical even if you're really sitting at your desk avoiding the impending week of work.  Topped with toasted oats, shaved almonds and coconut flakes, this smoothie hits all the notes of sweet, tart, and roasty flavors.  Find out how to make the smoothie and the toppings below!

Ingredients:
1 large banana
1/2 cup coconut milk
1/2 cup frozen pineapple
1/4 cup frozen mango

Toppings: 
1/4 cup oats
1/4 cup sliced almonds
1/4 cup shaved coconut

Instructions:
  1. Preheat oven to 350° F.
  2. Add oats, almonds & coconut to a baking sheet and bake for 8-10 minutes, until slightly darkened in color.
  3. Add the smoothie ingredients to a blender and mix until thoroughly combined.
  4. Add your smoothie to a large bowl and top with roasted toppings.
