Roasted Red Pepper Hummus

You know a recipe is good when you can't wait to make it again.  Today, I bring you the sequel to "Homemade Creamy Hummus."  It's called "Homemade Creamy Hummus II: The Roasted Red Pepper Story" or "Roasted Red Pepper Hummus" for short.  😂 I'm totally loving this make everything from scratch vibe, so when my first hummus recipe turned out so well, I knew that there would be many flavor variations to come.  This first one is brought to you because when I was younger, roasted red pepper hummus was my favorite flavor.  Plus, it's pretty much the easiest to make, so it's a great stepping stone into the world of flavored hummus.

The difference between the original hummus recipe and this roasted red pepper alternative?  You'd be amazed at how easy it is!  All you do is add roasted red peppers (I buy them from Trader Joe's), cayenne pepper and paprika.  You get an amazing roasted, spicy flavor from these 3 ingredients and the texture of the hummus becomes a little lighter.  The texture was perfect for dipping and/or spreading.  I first ate the hummus with carrot & zucchini fritters and then tried it with cucumber and on a veggie sandwich.  Let me tell you, once you make this recipe you're going to want to put this hummus on just about everything.  It's that good.  Find out how to make it below!



Total Time: 30 minutes
Servings: Approx 2 cups

Ingredients:
1 can chickpeas
12 oz jar of roasted red peppers
1/2 tsp baking soda
1/3 cup lemon juice
2 garlic cloves
1/2 tsp salt
1/2 cup tahini
1/4 tsp cumin
1/2 tsp cayenne 
1/4 tsp paprika

Instructions:
  1. Add the chickpeas to a medium pot with baking soda and cover with 1-2 inches of water.  Bring the pot to a boil and cook at a rolling boil for 20 minutes. Drain the chickpeas and set aside.
  2. While the chickpeas are boiling, combine the garlic, lemon juice and salt in a food processor.  Process until garlic is finely chopped.
  3. Add the tahini and roasted red peppers to the food processor and blend until thick and creamy.
  4. Add the chickpeas, paprika, cayenne and cumin and blend until mixture is smooth and creamy.

Serve with your favorite crackers and veggies or alongside some freshly made veggie fritters.
