Tomatillo Salsa (Salsa Verde)

 Last week Ryan's office was scheduled to have a virtual cooking class, so he bought the ingredients they called for, but missed the class because he was working.  I know what tomatillos are, but have never cooked with them or made salsa from scratch before.  With the ingredients he purchased, I looked up a recipe and make some tomatillo salsa for the first time and was amazed with how good it tasted.  We ate pretty much the entire 16oz jar of salsa over the course of a few days, so naturally I decided I needed to make it again (but tweak the recipe) and double the recipe.  Needless to say, I'm totally hooked on making salsa now and don't think I can go back to the stuff that comes in a jar and sits on the grocery store shelf for who knows how long.


Total Time: 25 minutes
Servings: Makes 16oz 

Ingredients:
1 lb tomatillos
1/4 yellow onion
5 garlic cloves
1 serrano pepper
1/4 cup chicken stock (or water)
1/4 cup cilantro
Juice of 2 limes
Salt to taste

Instructions:
  1. Preheat your oven to 425° F.
  2. Slice tomatillos in half and place on a baking tray lined with aluminum foil.  Add the 1/4 onion and garlic cloves and bake for 15-20 minutes.
  3. Add all ingredients to a food processor and pulse until you reach an even consistency.
  4. Add to a mason jar or other airtight container and allow to cool before using (about 2 hours).
