Roasted Garlic & Herb Cauliflower Mash
If you've never tried mashed cauliflower before, hear me out on this one. Mashed potatoes used to be my favorite part of Thanksgiving dinner. I loved everything about them - the creamy texture, rich buttery flavor. Ever since I started making mashed cauliflower for Thanksgiving, I haven't gone back to mashed potatoes since. Still not totally convinced? Here are two of the main reasons why you should make the switch too. 1 - Potatoes really aren't good for you at all. Not to mention that mashed potatoes typically have a ton of butter and cream in them, which makes mashed potatoes a delicious, but unhealthy dish. This mashed cauliflower uses olive oil instead of butter & almond milk instead of cream, so it's a much lighter and healthier version of a side dish than your typical mashed potatoes. 2 - They are so easy to make and difficult to screw up. Have you ever had gummy or lumpy mashed potatoes? They totally suck, right? Well don't worry - this cauliflower mash goes in the food processor and won't turn gummy so you avoid both of the typical errors of mashed potatoes. I promise you won't regret making this cauliflower mash instead of mashed potatoes. I'm honestly wondering why I wait until Thanksgiving every year to make this recipe since it's such an easy, delicious & versatile side dish.

Ingredients:
1 large head cauliflower, cut into florets
1/4 cup almond milk
3 tbs olive oil
1 1/2 tsp rosemary
1 1/2 tsp thyme
3-4 cloves roasted garlic
Salt to taste
Instructions:
- Bring a large pot of water to a boil and add the cauliflower. Cook for 11-12 minutes, until tender.
- Add the cauliflower, roasted garlic, herbs, olive oil and almond milk to the bowl of a food processor and pulse. Add salt and blend until smooth.
